30 Days of Egg Whites: 3 Minute English Muffin with Jam

This fabulously fast and simple high protein low carb recipe can be whipped up under 5 minutes and with multiple different spins and textures to tantalize your tastebuds.

Ingredients
  • 14g of PB2 (approx 2 tbsp)
  • 30g pumpkin puree
  • 2.5g of baking powder
  • Pinch of cinnamon (optional)
  • Pinch of salt
  • 65g of egg white
  • Dash Of almond milk
  • Sugar free jam to top (optional topping)
Method
  1. Combine all dry ingredients into a microwave safe dish. Ramkins are perfect for this.
  2. Stir in pumpkin and mix. Add in almond milk and egg whites. Combine until mixed thoroughly.
  3. Microwave for 3 minutes. Allow to cool before removing.
  4. Light dust muffin with flour and toast.

*This muffin actually tastes incredible when not toasted and has a similar taste to french toast and a light and fluffy texture. Give both a try. I promise you will not be disappointed.
