30 Days of Egg Whites: Bacon, Egg, Onion,Tomato, Mushroom, Zucchini and Cheese Omelette

Ingredients
  • 50g back bacon
  • 10g onion
  • 50g mushrooms
  • 15g mozzarella
  • 75g tomato
  • 50g zucchini
  • 250g egg whites
Method
  1. On the stove top heat pan nonstick pan on medium heat.
  2. Add bacon, onion, mushrooms, zucchini, and tomatoes. Cook until bacon is brown and onions and zucchini is soft.
  3. Add egg whites. Cook until egg is ¾ set then sprinkle with cheese. Remove once cheese is melted and golden brown. *Placing this under the broiler for a 1-2min is also a great way to finish this off
