30 Days of Egg Whites: Bacon, Egg, Zucchini and Cheese Muffins

The best present wrapping is bacon wrapping. Today’s recipe is an easy way to ensure your lunch box is packed with a protein punch.

Ingredients
  • 380g egg whites
  • 50g back bacon
  • 30g mozzarella cheese
  • 30g zucchini
  • 10g onion
  • Salsa to taste
Method
  1. Preheat oven to 350 degrees. On the stovetop heat a pan on medium heat.
  2. Combine bacon, zucchini, onion, salt and pepper.Cook until onion and zucchini are soft and bacon is brown to liking. Remove from heat and set aside.
  3. In a non stick muffin or cupcake tray (I used silicone cupcake trays). With your mixture, carefully spoon equally across. Fill each slot with egg whites, top with cheese then place into the oven and bake until egg is set, and cheese is nice and golden. Approximately 20-25 min.
