30 Days of Egg Whites: Bacon Wrapped Zucchini, Mozzarella, Onion, Mushroom Cupcakes

The best present wrapping is bacon wrapping. Today’s recipe is an easy way to ensure your lunch box is packed with a protein punch.

Ingredients
  • 380g of egg whites
  • 100g back bacon
  • 50g mushrooms
  • 10g onion
  • 20g Mozzarella
  • 50g zucchini
Method
  1. Preheat oven to 350 degrees. On the stovetop heat a nonstick pan on medium heat.
  2. Combine, onion, mushrooms and zucchini. Add in salt and pepper to taste. Cook until onion and zucchini are relatively soft. Remove from heat and set aside.
  3. In a non stick muffin or cupcake tray (I used silicone cupcake trays) line each muffin slot with bacon, pushing into sides. With your mixture, carefully spoon the mix equally across. Fill each slot with egg whites, top with cheese then place into the oven and bake until egg is set, bacon and cheese are nice and golden. Approximately 20-25 min.
