30 Days of Egg Whites: Curried Egg White Sandwich

Simple, fast, yet incredibly yummy - today we’re making curry in a hurry.

Ingredients
  • 50g of white bread (or bread of choice)
  • 125g of egg whites/li>
  • 1tsp of ½ fat mayo
  • Curry powder to taste (¼ tsp used here)
  • Salt and pepper to taste
  • Splash of lemon juice
Method
  1. Place egg whites in a microwave safe container. Microwave for approximately 60 secs. Remove, stir and place back in the microwave for another 30-45 secs depending on your microwave power. I like to keep the whites slightly moist.
  2. Remove egg whites from the microwave, add mayo, curry powder, salt and pepper and splash of lemon juice. Combine together. Continue to add curry powder to taste. Using your bread of choice, place your curried egg on the bread and enjoy!
