30 Days of Egg Whites: Sweet Potato, Bacon, Onion and Egg White Hash

Combining sweet and savoury flavours to create a simple and tasty hash that is easy to make and store.

Ingredients
  • 1 sweet potato (175g)
  • 63g of egg white
  • 35g back bacon (or Peameal style)
  • 10g red onion
  • 25g mushrooms
  • Oregano, salt and pepper to taste
Method
  1. Heat non stick pan on medium heat
  2. Prepare potato by washing and piecing holes with fork. Place sweet potato in the microwave and cook on high for 4 mins (this will vary with oven power)
  3. In the pan, combine bacon, onion, mushrooms and seasonings. Fry until soft.
  4. Remove potato from microwave. Mash the potato in a bowl with a fork.
  5. Remove bacon mixture and add to potatoes and combine. Add in egg whites (amount required will vary depending on the amount of potato that you use)
  6. With your hand, mould potato into cakes. Place back into pan and cook until crispy brown.
