30 Days of Egg Whites: Twice Baked Stuffed Sweet Potato and Egg White Boats

Today we’re going to sail our way towards our fiber, carb, protein and fat goal, with these incredibly scrumptious and easy stuffed sweet potato boats.

Ingredients
  • 50g ground chicken
  • 10g onion
  • 15g mozzarella
  • 125g egg whites
  • 1 sweet potato (175g)
  • Franks hot sauce to taste
Method
  1. Prepare potato by washing and piecing holes with fork. Place sweet potato in the microwave and cook on high for 4 mins (this will vary with oven power).You want the potato to be cooked but still relatively firm.
  2. Heat non stick on pan on a medium heat.
  3. Add onion and chicken and additional seasoning. Brown.
  4. Remove potato from microwave and carefully cut the inside out to make boat like shape.
  5. Add scooped out potato to the pan with the chicken and onion. Pour in egg whites and hot sauce to taste. Scramble until moist.
  6. Place potatoes into an oven proof dish. Scoop mixture into the potato boats. Top with cheese and place under the broiler until cheese is melted and golden brown.
