Mexican Hot Pot

This dish has the perfect balance of macros. Easily cook up a big batch and eat it for breakfast, lunch, dinner...it’s even perfect as a side! One 300g bowl is only 200 calories, too!

Ingredients
  • 540g 93% Lean ground beef
  • 224g (1 can) Pinto beans, drained
  • 200g Onion, chopped
  • 250g Mushrooms, sliced
  • 300g Classico brand Spicy Red Pepper Sauce (optional, this recipe includes this in the macros so if you don't use it, adjust the recipe)
  • 400g Diced canned tomatoes
  • 100g Cherry tomatoes (I like using cherry tomatoes because I like how they blister)
  • 3g Taco seasoning (I use Trader Joe’s brand)
  • 9g Peeled garlic, raw and roughly chopped
  • 1 Whole green bell pepper, chopped
  • Salt to taste
Instructions
  1. Brown ground beef, onion and garlic in a large pot
  2. Stir in taco seasoning
  3. Add the rest of the ingredients and let it cook on medium for 15 minutes or until you're happy with how reduced it becomes
  4. It's ready to serve and easy to reheat!

Breakfast: To serve this dish as a breakfast meal, add a poached or fried egg on top with a side of toast.

Lunch and dinner As a tasty lunch or dinner, serve on its own, with rice, tortilla or even extra steamed or roasted vegetables. It even makes a good pasta sauce, too.

As a side add a small bowl to the side of your main meal as a little something extra.
