Zucchini Fries

French fries. People love them, but the high fat and carb content aren’t always an option when striving to reach our goals. Baked zucchini fries are a great substitute to traditional fries and can be dipped in your favourite condiments or sugar free ketchup! Makes 8-10 ‘fries’. 1 Fiber

Ingredients
  • 125g Zucchini
  • 10g Egg Whites
  • 20g Almond Milk
  • 10g Bread Crumbs
  • 20g 100% Parmesan Cheese
  • Seasoning to taste
Instructions
  1. Preheat oven to 425F and line a baking sheet with parchment paper
  2. Slice zucchini into even sticks, about ½ inch think
  3. Mix egg whites with almond milk
  4. Mix bread crumbs with parmesan cheese and seasoning to taste
  5. Dip zucchini sticks in egg mixture followed by the bread crumb mixture to coat
  6. Place coated zucchini on baking sheet
  7. Cook for 20-25 or until golden, flipping half way through
